My car does just fine once I put it in drive and let it coast without giving it any gas, as well as accelerating on the highway but here is an example to my odd and annoying issue:

whenever I slow down coming to an intersection with a red light, and the light suddenly turns green before I even came to a complete stop, my car feels like it's slipping or having a hard time searching for the right gear when I step back on the gas...gets really hesitant????? Car has 88k miles and I had serviced the tranny around 10k miles ago...I have the 4L60E

Do you have a CEL?

Maybe a 3-2 solenoid?

Sounds like the car hasn't downshifted to the gear you normally accelerate in (like 1st) before you take off, and that's why it feels sluggish. Watch your speedometer when this happens. What speed are you moving at when you step on the gas again? You may not have reached the 2-1 downshift mph threshold for the PCM to command a downshift.
