Hey i have a 91 LO5, i ordered the FSM but haven't gotten it yet, my question is how many temp sensors are there? when i start the car up the temp gauge is at cold, then it goes all the way to HOT,
i am 99.9% sure it is the sensor, but which one goes to the dash? (i am used to my 94 LT1 ) also are they the same sensor from the LT1 to teh LO5? (the brass water pump one on the LT1 and the one on the intake on the LO5)

The computer uses the sender near the thermostat housing. The gauge and light use the sender in the driver's side head.

Yes, I think you should replace the one in the head. However, if you are not getting a high temp light as well, it's prolly a problem in the wiring to the gauge.
